Onion Pancakes

- 150 g quark
- 6 tbsp heavy cream
- Salt
- 8 tbsp oil
- 300 g flour
- 0.5 packet Baking powder
- 200 g herb cream cheese
- 12 pitted black olives
- 4 onions
- 2 Garlic cloves
- 2 tbsp olive oil
- 200 g tomatoes
- ground pepper
- 12 sardine fillets (canned)

Mix quark with cream, salt, oil and about half the flour using the dough hooks of an electric hand mixer. Combine the remaining flour with baking powder and knead into the dough by hand.

Divide the dough into four pieces and roll each into a flat disc; spread herb cream cheese over them and place on a greased baking sheet.

Chop olives. Peel onions and slice thinly into rings. Peel garlic and finely mince. Briefly blanch tomatoes, cool, peel, quarter, deseed and chop finely. Heat olive oil in a pan, sauté onions and garlic until translucent. Add tomatoes and olives; simmer until liquid reduces, seasoning with salt and pepper.

Spread the onion-tomato mixture over the dough discs, top each with three sardine fillets, and bake in a preheated oven at 200°C for about 30 minutes. Remove and serve immediately.
