Ingredients

  • 0.5 cube yeast (21 g)
  • 20 g lard
  • 1 tsp salt
  • 450 g flour
  • 600 g onions
  • 2 cloves garlic
  • 2 sprigs thyme
  • 2 tbsp olive oil
  • 1 bay leaf
  • Salt
  • black pepper (ground)
  • flour (for the work surface)
  • 6 anchovy fillets

Instructions

    Dissolve the yeast, lard and salt in 250 ml lukewarm water. Knead in the flour until the dough lightly releases from the edges. Add more water or flour if needed. Let the dough rise in a warm place for at least 45 minutes.

    Meanwhile peel and slice the onions into strips. Peel and chop the garlic, and strip the thyme leaves from the stems. Preheat the oven to 220°C fan.

    Sauté the onions in hot olive oil until translucent, add the bay leaf and thyme, season with salt and pepper. Roll out the dough on a floured surface and place it on a baking sheet lined with parchment paper.

    Spread the onion mixture over the dough and top with anchovy fillets. Bake in the preheated oven for about 25 minutes.
