Spicy Flammkuchen

Ingredients
- 0.5 cube fresh yeast (21 g)
- 350 g wheat flour type 1050 (+2 tbsp for working)
- Salt
- 3 stalks herbs (e.g., thyme and oregano)
- 100 g crème fraîche
- 1 egg yolk
- Pepper
- 2 red onions
- 100 g poultry salami (sliced)
- 6 green chili peppers (jarred)
- 2 tbsp olive oil

Dissolve yeast in 175 ml lukewarm water, mix with flour and 1 tsp salt to form a smooth dough that lifts from the bowl. Cover and let rise in a warm place for about 30 minutes.

Line a baking tray with parchment paper.

Knead the dough on a floured surface, roll into a large flatbread and place on the tray.

Wash herbs, shake dry and finely chop; mix with crème fraîche and egg yolk until smooth. Season lightly with salt and pepper. Spread over the dough, leaving a narrow edge free.

Peel onions, halve and slice thinly. Distribute onion slices, salami, and chili peppers over the flammkuchen. Sprinkle pepper and drizzle olive oil.

Bake in preheated oven at 220 °C (fan 200 °C; gas: level 3‑4) for about 10 minutes until golden brown.
