- 1 cube yeast
- 1 kg spelt flour (Type 1050)
- 2 tbsp salt
- 250 g turkey bacon
- 2 onions
- 2 tbsp butter
- 400 g sour cream
- 1 egg
- 50 g flour
- Salt
- black pepper (ground)
- 150 g grated cheese (e.g., Bergkäse)

Dissolve the yeast in 600 ml lukewarm water. Stir in 2-3 tbsp flour and let rise for about 15 minutes. Mix the remaining flour with salt in a bowl. Pour in the yeast mixture and knead into a smooth dough that lifts from the bowl edges. Add more flour or water if needed. Cover and rest for about 1 hour in a warm place.

Meanwhile, dice the bacon for the topping. Peel and finely chop the onions; sauté them in butter over medium heat for about 10 minutes until soft. Whisk together sour cream, egg, flour, salt, and pepper until smooth. Fold in the cooled onions and season well with salt and pepper.

Divide the dough into 12-15 pieces and shape each on a well-floured surface into oval flatbreads, leaving slightly thicker edges. Place on baking sheets lined with parchment paper and let rise again for about 15 minutes covered with a cloth.

Preheat the oven to 250°C (482°F) with upper and lower heat. Brush the flatbreads with sour cream, sprinkle with bacon, then distribute cheese over them. Bake in the hot oven for 15-20 minutes. Serve best hot.
