Spicy Onion Tart

Ingredients
- 600 g red onions
- 2 tbsp olive oil
- 2 small sprigs rosemary
- 2 small sprigs thyme
- Salt
- Pepper (freshly ground)
- 60 g black olives
- 10 anchovy fillets (jarred)
- 275 g puff pastry (refrigerated)
- 30 g crème fraîche
- 50 g goat cheese

Preheat the oven to 220°C (428°F) with upper and lower heat. Peel the onions and slice them into thin rings. In a hot pan, sauté in olive oil for about 8 minutes until softened. Wash the herbs and remove the leaves or needles. Season the onions with salt and pepper, then add the herbs. Drain the olives and anchovies.

Roll out the puff pastry and place it on a baking sheet lined with parchment paper. Spread the crème fraîche over the pastry, crumble the goat cheese on top, and season with pepper and a pinch of salt. Arrange the onion rings on the tart and top with olives and anchovies. Bake in the preheated oven for about 20 minutes until golden brown. Slice and serve.
