Ingredients

  • 5 large eggs
  • 5 tbsp milk
  • Salt
  • Pepper (freshly ground)
  • 2 Tbsp grated Parmesan
  • 2 tbsp chopped basil
  • 4 tbsp pitted olives (finely chopped)
  • 1 Red Onion
  • 2 tbsp olive oil

Instructions

    Whisk eggs with milk, salt, pepper, parmesan and basil. Peel the onion and slice into thin strips.

    Gently heat olive oil in a large pan. Sauté onions and olives until fragrant. Season with salt and pepper. Pour in the egg mixture and spread evenly. Cook over low heat until set. Flip the omelette and cook the other side until firm. Roll up and serve warm.
