Rustic Omelette with Rocket

Ingredients
- 800 g waxy potatoes
- Salt
- 2 Tomatoes
- 200 g Bockwurst sausage
- 1 bundle rocket
- 1 onion
- 8 eggs
- 60 ml milk
- Pepper (freshly ground)
- Nutmeg (freshly grated)
- 2 tbsp Vegetable oil
- 60 g freshly shaved Parmesan

Wash the potatoes thoroughly and boil them in salted water for 20 minutes. Drain, rinse with cold water, peel, and let cool completely. Preheat the oven to 180 °C (356 °F). Wash the tomatoes, quarter them, remove seeds and stems, and cut into pieces.

Slice the sausage thinly. Rinse, wash, dry, and roughly chop half of the rocket. Peel the onion and dice it finely. Beat the eggs with milk and season with salt, pepper, and nutmeg. Depending on size, halve the potatoes lengthwise and slice them.

Heat oil in a tall skillet over medium heat and sauté the potatoes with sausage slices, turning occasionally. Add onion, tomatoes, and chopped rocket; stir and pour in the egg mixture. Tilt and rotate the pan to spread the eggs evenly and let set.

Transfer the omelette to the preheated oven and bake for about 15 minutes until golden brown. Remove, garnish with remaining rocket and freshly shaved Parmesan, and serve sprinkled with pepper.
