Plum Jam

The plum jam from Spoonsparrow is tender and full-bodied in flavor.

Ingredients

  • 1 kg ripe plums
  • 1 kg gelatin sugar (ratio 1:1)
  • 50 ml grape juice
  • 1 lemon (juice)

Instructions

    Clean jars and lids thoroughly: sterilize in a pot of boiling water for about 10 minutes and let drain on a clean towel.

    Wash and pit the plums. Puree half, cut the rest into small pieces. Add lemon juice and gelatin sugar, mix well and let sit at least 1 hour. Put all ingredients in a pot and slowly bring to a simmer over low heat while stirring. Add grape juice and cook bubbling for about 4 minutes.

    Perform a gel test. Fill jars up to the rim with plum jam, seal and place on a damp kitchen towel upside down for about 15 minutes to cool. Then turn upright and let cool further.
