Ingredients

  • 200 g Green beans
  • Salt
  • 2 onions
  • 150 g smoked blood sausage (not sliced, but small thin sausages in pieces)
  • 2 tbsp clarified butter
  • 500 g Potatoes
  • pepper (ground)
  • bean herb
  • 4 eggs
  • 50 g whipping cream (¼ cup)

Instructions

    Clean the beans and cut them in half if desired. Boil in salted water for 10 minutes, then shock with cold water and drain.

    Peel and chop the onions. Slice the blood sausage into thin rounds.

  3. 3.

    Heat 1 tbsp clarified butter in a large pan. Sauté the onions until translucent. Add the sausage and beans, stir and cook for several minutes. Season with pepper and a pinch of bean herb, then remove from the pan.

    Wash and peel the potatoes, cut them into matchstick‑sized sticks. Heat the remaining butter in the pan, add the potatoes gradually, and fry vigorously. Salt and pepper to taste, cooking for 10 minutes.

    Spread the sausage–bean mixture over the cooked potatoes.

    Whisk the eggs with salt, pepper, bean herb and cream. Pour over the potatoes. Cover the pan with a lid and let it set for a few minutes until the eggs are firm.

    Optionally garnish with fresh bean herb before serving.
