- 400 g chanterelles
- 1 bundle parsley
- 1 Garlic clove
- Salt
- Pepper (freshly ground)
- 10 eggs
- nutmeg
- 3 tbsp butter

Clean the chanterelles and slice them. Wash the parsley, shake dry, pluck leaves from stems and finely chop, leaving a few sprigs for garnish. Peel the garlic, finely chop it as well, and sauté with the chanterelles and parsley in 1 tbsp hot butter for about 5 minutes. Season with salt and pepper and remove from heat.

In a bowl whisk the eggs with a pinch of salt, pepper, and nutmeg. In a hot pan melt butter and cook 4 omelettes. Place ¼ of the chanterelles in the center of each omelette, fold over, and let it finish cooking. Serve garnished with parsley leaves.
