Ingredients

  • 50 g Pine nuts
  • 500 g green beans
  • 2 handfuls chives
  • 10 eggs
  • 2 tbsp heavy cream
  • 40 g grated Emmental cheese
  • Salt
  • Pepper (freshly ground)
  • 4 Tbsp sunflower oil

Instructions

    Roast the pine nuts in a dry skillet until golden brown.

    Wash, trim and boil the green beans in salted water for about 6 minutes. Meanwhile rinse the chives, pat dry and shake off excess moisture. Drain the beans, shock them in cold water and let them drain well. Wrap each bean with a strip of chives and tie together; cut remaining chives into fine ribbons.

    Beat the eggs with cream and Emmental cheese. Season with salt and pepper. Heat 1 tbsp oil in a rectangular pan and pour about one‑quarter of the egg mixture. Sprinkle roughly 5 bean bundles and one‑quarter of the pine nuts on top, then cook for about 4 minutes until set. Repeat to make four omelettes. Garnish with chive ribbons before serving.
