Omelett Surprise

Ingredients
- 3 eggs
- 75 g sugar
- 2 Tbsp hot water
- 90 g flour
- 40 g almond flakes
- sugar
- 1000 ml ice cream (e.g., blood orange)
- 3 egg whites
- Lemon juice
- 150 g sugar
- 1 orange
- mint (for garnish)

Separate the eggs. Whip the egg whites until stiff, letting 2 tbsp of sugar fall in as you beat. Beat the yolks with hot water and the remaining sugar until fluffy. Pour the beaten yolk mixture over the whipped whites and sift flour on top. Spread onto a baking sheet lined with parchment paper. Sprinkle almond flakes over it. Bake in a preheated oven at 200°C for about 12 minutes. Transfer the sponge cake to a sugared kitchen towel. Let cool.

Cut the sponge cake so that the ice cream block can be wrapped around it once. Cut small squares from the remaining sponge for the cross-sections and attach them. Freeze until serving time.

Whip the egg whites stiff, adding lemon juice and letting sugar fall in as you beat. Place the ice cream block on a fireproof plate. Brush around it with meringue. Bake in a preheated oven at 250°C to lightly brown. Slice the Omelett Surprise. Arrange with orange and mint and serve immediately.
