Ingredients

  • 100 g Soft Butter
  • 100 g brown sugar
  • 75 g beetroot syrup
  • 450 g flour
  • 1 tsp Baking powder
  • a pinch salt
  • 2 tsp ground ginger
  • 0.25 tsp ground cloves
  • 1 egg
  • flour (for the work surface)
  • powdered sugar
  • Lemon juice
  • food coloring
  • dark chocolate couverture
  • sugar pearls (for decoration)

Instructions

    Combine butter, sugar and syrup in a pot over low heat until melted, then let cool slightly. In a bowl mix flour, baking powder, salt, ginger, cloves and egg; add the syrup mixture and knead into dough. Add more flour if dough is too soft or sticky; it should be firm and workable.

    Roll out dough on floured surface to about 4 mm thickness, cut out fir tree shapes and place on a parchment-lined tray. Pin holes with a wooden stick for hanging. Bake in preheated oven at 180°C (convection) in the middle rack for about 15 minutes. Remove and cool.
