Ingredients

  • 200 g dates (pitted)
  • 200 g pineapple flesh
  • 200 g kiwi (peeled)
  • 0.5 tsp cinnamon
  • juice of one lemon
  • 2 tbsp sugar
  • 80 ml sweet dessert wine
  • pomegranate seeds (optional)
  • 250 ml milk
  • 250 ml heavy cream
  • 1 Vanilla bean
  • 5 egg yolks
  • 100 g sugar

Instructions

    Coarsely chop the fruit and mix with cinnamon, lemon juice, sugar and wine in a bowl.

    Spread onto 4 sheets of aluminum foil, fold over the fruit, place on a baking tray and bake at 180°C for about 25 minutes.

    Whisk milk and cream with the vanilla bean and scraped seed into a saucepan and bring to a boil.

    Beat egg yolks with sugar until creamy. Stir in the hot milk-cream mixture, return everything to the pan and whisk over low heat until thickened, do not let it boil.

    Strain the vanilla sauce through a sieve.

    Serve by opening the foil packets onto plates, sprinkle pomegranate seeds if desired and pour the vanilla sauce on top.
