Ingredients

  • 175 g soft butter
  • 175 g sugar
  • 1 untreated lemon (zest)
  • 4 eggs
  • 1 pinch salt
  • 250 g flour
  • 100 g Ground Almonds
  • 1 tsp Baking powder
  • 80 ml milk
  • 750 g apricots
  • 100 g flour
  • 75 g sugar
  • 0.5 tsp cinnamon powder
  • 75 g butter

Instructions

    Preheat the oven to 180°C and line a springform pan with parchment paper.

    For the dough, beat the butter with sugar and lemon zest until fluffy. Gradually fold in the eggs. Mix the flour with almonds and baking powder, then alternately stir it into the butter mixture with milk, creating a smooth, spreadable batter. Pour into the pan and level the surface.

    Wash, dry, halve, and pit the apricots. Press them gently into the dough with the concave side down.

    For the crumble, combine flour, sugar, and cinnamon in a bowl. Melt butter, drizzle over the mix, and stir until crumbs form. Sprinkle over the apricots and bake for about 50 minutes or until golden brown (test with a skewer). If too dark, cover with foil early. Remove from oven and cool.
