Ingredients

  • 5 large cloves garlic
  • 3 egg yolks
  • 1 tsp Medium Hot Mustard
  • Salt
  • white pepper (from grinder)
  • 300 ml olive oil
  • 3 Stalks Parsley
  • 0.5 tbsp lime juice

Instructions

    Peel and press the garlic cloves. Add the egg yolks, mustard, a pinch of salt and pepper. Whisk everything in a large bowl until pale and creamy.

    Add the oil first dropwise, then slowly in a steady stream while continuously whisking. Always fully incorporate the oil before adding more.

    Wash the parsley, shake dry, remove leaves, finely chop and fold into the aioli. Season with salt and lime juice, spoon into small bowls and serve.
