Ingredients

  • 1 cucumber
  • Sea salt
  • 2 cloves garlic
  • 1 sprig mint
  • 1 tbsp Olive Oil
  • 1 tsp white wine vinegar
  • 200 g Greek yogurt
  • Pepper

Instructions

    Peel the cucumber, cut it lengthwise in half, remove seeds and dice finely. Sprinkle with sea salt and let sit for about 10 minutes to draw out water, then pat dry. Peel and finely grate the garlic with a pinch of salt. Rinse the mint leaves, shake off excess moisture, pick them off stems and roughly chop. Mix the grated garlic, olive oil, and vinegar into the yogurt. Fold in the cucumber cubes and season with salt and pepper to taste.
