Oatmeal with Plum-Date Compote

Ingredients
- 2 tbsp pumpkin seeds (15 g each)
- 4 dried figs
- 20 g ginger root
- 4 organic oranges
- 50 g coconut oil
- 160 g rolled oats (oatmeal)
- Salt
- 600 g plums
- 4 dried dates (pitted)
- 2 star anise
- 2 tsp Cinnamon
- 60 ml oat cream
- 4 tbsp vegan dark chocolate (min. 70% cocoa; 10 g each)
Instructions

Roast pumpkin seeds in a dry pan over medium heat for 3 minutes, cool and roughly chop. Remove stems from dried figs and cut into small cubes. Peel and grate ginger.

Wash oranges hot, pat dry, finely grate zest, then juice. Heat 30 g coconut oil in a pot. Add oatmeal, pumpkin seeds, fig cubes, ginger, and half the orange zest; sauté over medium heat for 3 minutes. Deglaze with 1 l water and bring to boil. Add half the orange juice and a pinch of salt, reduce heat and simmer for about 20 minutes, stirring occasionally and adding more water if needed.

Meanwhile wash plums, halve, pit, and cut into wedges. Cube dates. Heat remaining coconut oil in a pot. Sauté plums, dates, and star anise over medium heat for 2–3 minutes, then deglaze with the remaining orange juice and 200 ml water. Stir in cinnamon, a pinch of salt, and the rest of the orange zest. Simmer compote on low heat for 10–15 minutes.

Taste oatmeal, ladle into bowls, spoon some plum compote over it, drizzle oat cream, and sprinkle chocolate shards on top. Serve remaining compote separately in small bowls.
