Ingredients
- 1 egg
- Salt
- 100 g flour (maybe a bit more)
- 2 tbsp liquid butter
- 200 ml coconut milk
- Coconut oil (for frying)
- 2 chicken breast fillets (about 140 g each)
- 2 tbsp Coconut oil
- a handful of freshly chopped coriander leaves
- Salt
- pepper (ground)
- 1 splash Lemon juice
Instructions

Whisk the eggs, a pinch of salt, flour, butter and coconut milk into a smooth batter and cover for about 10 minutes.

Meanwhile rinse the chicken, pat dry and cut into strips. In a hot pan with coconut oil, brown the chicken until golden. Remove from heat, fold in coriander, season with salt, pepper and lemon juice, and let it rest briefly.

Heat a small pan with a little coconut oil and pour batter to make 8 crêpes. Tilt the pan to spread evenly and cook 1–2 minutes until golden. Flip and finish cooking on the other side. Arrange two overlapping crêpes on plates or fill glasses as a ‘bag’, top with chicken, and serve.
