Oat Porridge with Apricots

Oat porridge with apricots is a perfect after-work recipe – quick to make, healthy and with fresh ingredients.
Ingredients
- 200 g rolled oats
- 600 ml Milk
- 2 tsp bourbon vanilla sugar
- 2 tbsp raisins
- 800 g ripe apricots
- agave syrup
Instructions

Bring the milk with vanilla sugar and oats to a gentle boil, stirring occasionally, and let it simmer quietly for about 15-20 minutes until the oats have swollen and a nice porridge has formed.

If desired, add more milk. Then divide into two bowls.

Soak the raisins in warm water for a short time, then drain them.

Wash, rinse, peel, halve and pit the apricots. Heat the apricots with 80 ml water and 4 tbsp agave syrup in a pot, cover and simmer for 2-3 minutes. Let cool.

Serve the porridge topped with apricots and raisins.
