Ingredients

  • 150 g oatmeal
  • 600 ml Vegetable Broth
  • 200 g mixed mushrooms
  • 1 Shallot
  • 1 handful parsley
  • 2 sprigs Rosemary

Instructions

    Bring oatmeal in a pot with 500 ml broth to a boil. Simmer for 1 minute over medium heat, then remove from the stove and let it soak for 10 minutes.

    Meanwhile clean the mushrooms and cut into pieces if needed. Peel and chop the shallot. Sauté mushrooms and shallot in a hot pan for 3 minutes over medium heat, deglaze with remaining vegetable broth and simmer for another 5 minutes; season with pepper. Wash herbs, pat dry, and finely tear them.

    Serve the porridge with mushrooms in two bowls and sprinkle with the herbs.
