Oatmeal Nut Bars

Spoonsparrow oatmeal bars with nuts: These nut bars are perfect for a quick energy boost!

Ingredients

  • 500 g honey
  • 100 g chopped nuts (e.g., walnuts, hazelnuts)
  • 200 g dried fruit (e.g., raisins, cranberries, apricots)
  • 2 Eggs
  • 200 g rolled oats
  • 200 g bran flakes
  • 100 g shredded coconut
  • 50 g sesame seeds
  • 1 pinch salt
  • 1 tsp ground cinnamon
  • 1 tsp ground vanilla

Instructions

    Heat 125 ml water with honey in a saucepan over medium heat until the honey dissolves.

    Meanwhile, roughly chop nuts and dried fruit.

    Separate egg whites from yolks. In a bowl, mix oats, bran flakes, coconut, sesame seeds, dried fruit, nuts, salt, cinnamon, vanilla, and yolk. Stir in the honey mixture and let sit for 10 minutes to absorb liquid.

    Beat egg whites until stiff peaks form, fold into the batter, then spread onto a parchment-lined baking sheet. Cover with plastic wrap and press down evenly with a rolling pin. Remove the wrap and bake in a preheated oven at 160 °C (140 °C fan; gas: level 1–2) for 20–30 minutes until golden brown.

    Remove from oven, cut into 30 equal bars while still hot. Store the oatmeal nut bars in a cool, dry, dark place.
