Nut Bars

Ingredients
- 150 g flour
- 115 g butter
- 40 g sugar
- 0.5 tbsp cocoa powder
- 1 pinch salt
- 1 egg yolk
- 4 tbsp espresso (cold)
- flour (for rolling out)
- 50 ml whipping cream (30%)
- 50 g dark chocolate (70% cacao)
- 50 g Pecan nuts

Preheat the oven to 180 °C (top and bottom heat). In a bowl combine flour, 100 g butter in pieces, sugar, cocoa powder, salt, egg yolk and 2 tbsp espresso. First mix everything with the dough hooks of a hand mixer, then knead by hand into a smooth dough. Roll the dough between two lightly floured sheets of cling film to about 0.5 cm thickness (approximately 18×20 cm) and place it on a baking tray lined with parchment paper. Bake in the oven for 12–16 minutes and let cool on the tray.

Heat the cream for the topping. Remove the pot from the stove, roughly chop the chocolate and melt it in the hot cream. Stir in 15 g butter and the remaining espresso (2 tbsp). Cover and chill until cooled but still creamy (about 30 minutes). Then spread the mixture over the cooled dough sheet. Roughly chop pecan nuts and sprinkle on top. Chill again (about 30 minutes) and cut into pieces (approximately 3×5 cm) when the topping has set.
