Oatmeal Macarons

Quick and healthy dessert: oatmeal macarons are perfect for gifting, bringing along, and snacking.

Ingredients

  • 100 g Soft Butter
  • 2 tsp vanilla sugar
  • 100 g whole cane sugar
  • 1 pinch salt
  • 1 egg
  • 400 g oats
  • 1 tsp Baking powder
  • 100 g dark chocolate chips

Instructions

    Whisk butter with vanilla sugar, sugar and salt, then fold in the egg. Mix oats with baking powder and add to the mixture. Combine everything into an even dough.

    With damp hands form 35 small balls about 2 cm in diameter from the dough and place them on a parchment‑lined tray with plenty of space between each. Bake for 10–15 minutes in a preheated oven at 180 °C (fan: 160 °C, gas: level 2–3) until golden yellow. Cool the oatmeal macarons on a wire rack.

    Melt one third of the chocolate chips over a hot, non‑boiling water bath, let cool slightly and spoon a small dollop onto each cookie. Garnish with the remaining chocolate chips and allow to dry. Serve the oatmeal macarons arranged in a basket.
