Oatmeal Cranberry Cookies

The oatmeal cranberry cookies from Spoonsparrow are a must-try!

Ingredients

  • 150 g coconut blossom sugar
  • 300 g coarse rolled oats
  • 200 g whole wheat flour (e.g., spelt whole wheat flour)
  • 1 pinch salt
  • 1 pinch cinnamon
  • 150 g dried cranberries (unsweetened or sweetened with apple juice)
  • 250 ml rice drink (rice milk) (or oat drink)

Instructions

    Mix sugar, oats, flour, salt, cinnamon and cranberries in a bowl. Pour in the rice drink and stir briefly so the dough does not become too soft. Let it sit at room temperature for about 10 minutes to swell.

    Using two spoons, drop small mounds of dough onto a baking sheet lined with parchment paper and gently flatten them. Bake in a preheated oven at 180 °C (fan 160 °C; gas: level 2–3) for about 10–15 minutes, then remove and let cool.
