Oatmeal Bars with Peanut Butter and Honey

Ingredients
- 500 g honey
- 50 g Pine nuts
- 50 g peanuts
- 200 g dried apricots
- 100 g dried cranberries
- 200 g whole grain rolled oats
- 200 g whole wheat flakes
- 50 g sesame seeds
- vanilla pods
- 1 tsp cinnamon
- 1 pinch salt
- 2 Eggs
- 1 tbsp Peanut butter
Instructions

Warm honey with 125 ml water in a pot until dissolved.

Meanwhile chop pine nuts and peanuts. Dice apricots and cranberries, then mix with oats, wheat flakes, pine nuts, peanuts, and sesame seeds. Split one vanilla pod lengthwise, scrape out the seeds, and add them along with cinnamon and a pinch of salt to the dry mixture.

Separate the eggs.

Pour honey-water over the dry mixture, stir in peanut butter and yolks. Let the batter rest for 10 minutes.

Whisk egg whites until stiff peaks form.

Fold the meringue into the oatmeal mix and spread evenly onto a parchment-lined baking sheet. Cover with plastic wrap, press firmly with a rolling pin, then remove the wrap. Bake at 160 °C (fan 140 °C; gas: level 2) for 20–30 minutes until golden brown. While still hot cut into strips and cool on a rack.
