Oatmeal Bars with Nuts and Fruits

Ingredients
- 400 g honey
- 80 g unsalted peanuts
- 50 g cashews
- 200 g hearty rolled oats
- 200 g wheat flakes
- 20 g almond sticks
- 180 g dried fruit (apricots, raisins, dates or figs)
- 0.25 tsp vanilla powder
- 1 pinch salt
- 2 Eggs
- 2 tbsp peanut butter
- 1 tbsp peeled sesame seeds

Add honey and 140 ml water to a pot and heat until the honey dissolves.

Meanwhile, roughly chop peanuts and cashews and mix with oats, wheat flakes, and almond sticks in a large bowl. Chop apricots into small pieces; add apricots, raisins, vanilla powder, and salt to the nut-flake mixture. Pour honey-water over it. Separate eggs; whisk yolks and peanut butter into the nut-flake mixture. Let the mass sit for 10 minutes.

Beat egg whites until stiff peaks form and fold them into the oatmeal mixture. Spread the batter evenly on a baking sheet lined with parchment paper. Cover with plastic wrap and press firmly onto the sheet using a rolling pin. Remove the film, sprinkle sesame seeds, and bake in a preheated oven at 175 °C (convection 150 °C; gas: level 2) for 20–30 minutes until golden yellow. Take out and cut into pieces immediately.
