Oatmeal Bars Made with the Thermomix
You can easily make oatmeal bars at home. With fresh nuts, grains, coconut oil and honey your oatmeal bars will be a hit.
Ingredients
- 50 g fine rolled oats
- 25 g coarse rolled oats
- 100 g buckwheat flakes
- 1.5 tbsp psyllium husk
- 2 tbsp Chia seeds
- 3 tbsp puffed amaranth
- 3 tbsp quinoa
- 2 tbsp ground flaxseed
- 150 g mixed nuts (peanuts, walnuts and almonds)
- 30 g sunflower seeds
- 20 g Pumpkin Seeds
- 3 tbsp coconut palm sugar
- 1 tsp cinnamon
- 90 g coconut oil
- 80 g honey (vegan alternative: agave syrup)
- 2 tbsp Almond Butter
Instructions

Add the nuts & almonds to the mixing bowl and pulse for 1-2 seconds on speed 7, depending on their size.

Add all remaining dry ingredients and mix for 3 seconds on speed 3. Transfer the mixture to a bowl.

Pour coconut oil into the mixing bowl and liquefy for 2 minutes at 60°C on speed 2.

Return the oatmeal mixture, almond butter and honey to the bowl. Mix for 2 minutes at 50°C on speed 3.

Pour the mass into a baking pan lined with parchment paper (25 x 30 cm) and press it flat.

Preheat the oven to about 5 minutes before baking and then bake for 15-20 minutes at 160°C fan or conventional heat. Keep an eye on it so the oatmeal mass does not darken too much.

Let the baked oatmeal mass cool for at least 3-4 hours (best overnight) and then cut into equal strips with a sharp knife.
