Spoonsparrow oatmeal bars: The bars are perfect for a quick energy kick!

Ingredients

  • 500 g honey
  • 200 g rolled oats
  • 200 g wheat flakes
  • 80 g sunflower seeds
  • 50 g chopped peanuts
  • 20 g sesame seeds
  • 100 g dried raisins
  • 200 g dried cranberries
  • 1 tsp vanilla extract
  • 1 pinch salt
  • 2 Eggs
  • 1 tbsp Peanut butter

Instructions

    Warm 125 ml water with the honey in a pot until the honey dissolves.

    Meanwhile, mix the oats and wheat flakes with sunflower seeds, peanuts, and sesame in a large bowl. Add the dried fruit, vanilla, and salt. Pour the honey-water over it. Separate the eggs; whisk the yolks with peanut butter and stir into the mixture, letting it sit for 10 minutes to absorb.

    Preheat the oven to 140°C (275°F) fan‑forced. Line a baking tray with parchment paper.

    Beat the egg whites until stiff peaks form and fold them into the oat mixture. Spread the batter evenly on the tray. Cover with cling film and press firmly with a rolling pin. Remove the film, bake for 20–30 minutes until golden brown, then cut while hot. Store the bars in a cool, dry, dark place.
