Oatmeal bars from Spoonsparrow: The included whole grain flakes, apricots, and cranberries provide plenty of energy – here’s the recipe!

Ingredients

  • 350 g honey
  • 250 g rolled oats
  • 200 g wheat flakes
  • 50 g sunflower seeds
  • 50 g chopped peanuts
  • 50 g sesame seeds
  • 200 g dried apricots
  • 100 g dried cranberries
  • 0.5 tsp vanilla powder
  • 1 tsp cinnamon
  • a pinch of salt
  • 2 Eggs
  • 2 tbsp peanut butter

Instructions

    Warm honey with 125 ml water in a pot until dissolved. Meanwhile mix oats, wheat flakes, peanuts, and sesame in a large bowl. Dice the dried fruit and add it with the spices.

    Separate the eggs; add yolks to the oat mixture, set whites aside. Pour honey-water over the mixture and stir in peanut butter carefully. Let the mass soak for 10 minutes.

    Preheat oven to 140°C fan. Line a baking tray with parchment paper.

    Beat egg whites until stiff and fold into the oat mixture. Spread the dough evenly on the tray, cover with cling film, press down firmly with a rolling pin. Remove the film and bake for 20–30 minutes until golden‑yellow. Cut hot into pieces. Store bars in a cool, dry, dark place.
