Oat Pancakes with Oranges and Walnuts

Ingredients

  • 2 oranges
  • 4 tsp coconut oil (5 g)
  • 2 tbsp date syrup
  • 2 tbsp lemon juice
  • 2 Bananas
  • 200 g soft rolled oats
  • 150 ml soy drink (soy milk)
  • 150 g cottage cheese
  • 1 egg
  • 2 tsp Baking powder
  • 2 tbsp walnut kernels (15 g)

Instructions

    For the topping, cut the orange skin off with a knife so that the white pith is completely removed. Use the knife to separate the fruit segments in a wedge shape and catch the juice that drips out.

    Melt 1 tsp coconut oil in a pan. Add date syrup and stir over medium heat until melted. Deglaze with orange and lemon juice. Add orange slices and warm on low heat for 2 minutes; then set aside.

    Peel bananas and mash with a fork. Mix with oats, soy drink, cottage cheese, egg, and baking powder to form a batter.

    Bake the pancakes in three batches of four each, using 1 tsp oil per pan. Pour 4 spoonfuls of batter into the pan and cook over medium heat for 3–4 minutes per side. Chop walnuts as you go.

    Serve the pancakes on plates with orange slices on top and sprinkle with chopped walnuts.
