Oat‑Coconut Porridge with Berries

The tasty oat‑coconut porridge with berries from Spoonsparrow provides a great start to the day.

Ingredients

  • 500 ml milk
  • 200 ml coconut milk
  • 1 pinch salt
  • 150 g rolled oats
  • 200 g Raspberries
  • 150 g red currants
  • 1 tbsp Lemon Juice
  • 1 tbsp honey
  • 15 g shredded coconut (2 tbsp)

Instructions

    Bring the milk, coconut milk, salt and oats to a boil, then simmer gently for about 10 minutes, stirring occasionally.

    Meanwhile wash the berries. Set aside 50 g raspberries and 30 g currants. In a pot warm the remaining berries with lemon juice and honey for about 2 minutes, then lightly mash them with a fork.

    Serve the porridge in glasses and sprinkle with the reserved berries and shredded coconut.
