Nutty Couscous Salad with Fruits

Ingredients
- 300 g Couscous
- 400 ml Vegetable broth
- 4 Spring Onions
- 200 g dried fruits (e.g., figs, dates, raisins)
- 1 Pomegranate
- 2 tbsp walnut kernels
- oranges
- 3 tbsp olive oil
- 1 tsp Honey
- 4 sprigs Parsley
- Salt
- Pepper

Place couscous in a bowl, pour boiling broth over it and let it soak for about 10 minutes.

Meanwhile wash and trim the spring onions, slicing them into thin rings. Chop the dried fruits. Cut the pomegranate in half, remove the seeds and catch the juice.

Finely chop the walnuts. Rinse a half orange under hot water, pat dry, squeeze out the juice and grate the peel. Mix the captured pomegranate juice with olive oil, orange juice and zest plus honey. Gently fold in the spring onions, dried fruits, and walnuts into the couscous. Let it rest for 15 minutes, adding a little warm broth if needed.

In the meantime wash and shake off the parsley, then chop the leaves. Just before serving mix it with the couscous and season everything with salt and pepper.
