Chocolate French Toast

Ingredients

  • 150 g chopped hazelnuts (peeled, roasted)
  • 1.5 tbsp liquid coconut oil
  • 1.5 tbsp cocoa powder
  • a pinch of vanilla
  • 3 dried dates (pitted)
  • 8 slices whole grain toast
  • 3 eggs
  • 1 tbsp Raw cane sugar
  • 250 ml milk (3.5% fat)
  • 40 g Butter

Instructions

    Grind the hazelnuts in a blender for about 15 minutes into a paste (cool the blender occasionally to prevent overheating), add coconut oil, cocoa, vanilla and dates, and blend until a creamy chocolate‑nut spread forms.

    Spread four slices of toast with the chocolate mixture. Place the remaining slices on top and press down.

    Whisk the eggs with raw cane sugar and milk in a shallow bowl. Gently dip each toast from both sides into the egg mixture and let excess drip off.

    Heat some butter in a pan and fry the toasts 2–3 minutes per side until golden brown. Repeat with the remaining toasts and serve immediately.
