Ingredients
- 500 g mixed nuts (e.g., almonds, hazelnuts, cashews)
- 3 cloves of mace
- 3 allspice berries
- 0.25 cinnamon stick
- 1 star anise (optional)
- 1.2 l red wine (e.g., Pinot Noir)
- 500 g sugar
- 6 small jam jars (screw caps)
Instructions
-
1.
Roast the nuts in a dry pan without fat, stirring constantly until lightly golden brown. Let them cool and fill the jars with the spices and nuts.
-
2.
In a large pot, melt the sugar over low heat, deglaze with red wine, add more liquid, and reduce slightly. The syrup should reach a honey‑like consistency.
-
3.
Pour enough syrup over the nuts to cover them completely. Seal the jars tightly and store in a dark, dry place.
-
4.
Let the nuts steep for about one week.
