Nut Tart

Ingredients
- 4 eggs
- 1 tsp salt
- 80 g sugar
- 1 packet vanilla sugar
- 50 g flour
- 50 g walnuts (ground)
- 1 tbsp cocoa powder
- 0.5 tsp cinnamon
- 2 tsp cornstarch
- 0.5 tsp Baking powder
- butter (for greasing)
- bread crumbs
- 200 ml whipping cream
- 1 tbsp cocoa powder
- walnut kernels
- 40 g dark chocolate (thin slices)
- 50 g chopped walnut kernels
- 50 g candied nuts
- 150 g nut nougat cream

Preheat the oven to 160°C fan.

Separate the eggs and beat the whites with salt until stiff. When the mixture starts to firm, gradually add sugar and vanilla sugar. Then fold in the yolks one at a time.

Sift flour, cinnamon, cocoa, cornstarch, ground walnuts and baking powder over the egg mixture. Gently fold in with a whisk.

Grease the bottom of a springform pan and line it with bread crumbs. Pour the batter into the pan and smooth the top. Bake for about 30 minutes. Let cool in the pan, then release from the mold and cut crosswise in half.

Beat the cream until stiff, stir in cocoa and 1–2 tbsp nougat cream. Spread about one‑third of the cream on the base of the tart and place the lid on top. Brush the remaining cream over the cake and decorate with a piping bag and star tip as desired. Line the rim of the tart with the remaining nougat cream (leaving 3 tbsp). Sprinkle with candied nuts and chopped walnut kernels. Place a dollop of nougat cream on each cream puff and finish with walnut kernels and chocolate slices.
