Goji Berry Mango Tartlets
Try the delicious Goji Berry Mango Tartlets! Thanks to their high vitamin A content, these tartlets are great for our beauty.
Ingredients
- 100 g pecans
- 60 g oatmeal
- 4 dates
- 0.5 tsp vanilla extract
- 0.5 tsp cinnamon
- 3 mangoes
- 185 g raspberries
- 185 g goji berries
Instructions

Add pecans, oatmeal, dates, vanilla extract and cinnamon to a blender and pulse until finely pureed. Set aside.

Peel the mangoes and blend them. Transfer one-third of the mango puree (yellow) to a separate bowl. Blend the remaining two-thirds with 125 g raspberries and 125 g goji berries (orange).

Transfer half of the mixture to another bowl and add 60 g raspberries and 60 g goji berries (reddish). Mix until a smooth paste forms.

Press one-quarter of the nut-date mixture into a mini tart ring.

Layer the tart base with about 2 cm each of the three purees: first the reddish mix, then the orange mango‑raspberry‑goji mix, and finally the pure yellow mango puree. Repeat to form three more tartlets.

Before serving place the tartlets in the freezer for at least 30 minutes. Remove, take them out of the rings, and enjoy. Alternatively, fill small glasses and refrigerate for at least 30 minutes before eating.
