Ingredients

  • 150 g nougat
  • 150 g dark chocolate (70% cocoa)
  • 250 ml milk (3.5% fat)
  • 250 ml Whipping Cream
  • 6 egg yolks
  • 50 g raw cane sugar
  • 0.5 tsp gold dust
  • 4 edible flowers

Instructions

  1. 1.

Cut the nougat into small pieces and finely grate or chop the chocolate.

  2. 2.

Heat the milk and cream in a saucepan. Whisk the egg yolks with the sugar over a double boiler until creamy. Remove from heat. Pour the hot cream-milk mixture into the eggs and return to the double boiler, stirring thickly-creamy (do not boil). Remove from heat, stir in the chocolate with nougat and let it melt.

  3. 3.

Cool the mixture in an ice bath. Finish in an ice cream maker or freeze in a shallow metal dish, stirring regularly until creamy frozen.

  4. 4.

Serve by filling into chocolate shells as desired and garnish with gold dust and edible flowers.
