Ingredients

  • 4 eggs (size M)
  • 250 g powdered sugar from raw cane sugar
  • 1 pinch salt
  • 1 tsp ground anise
  • 250 g flour

Instructions

    Add eggs to a large mixing bowl and sift the powdered sugar over them. Add anise and salt, then beat into a voluminous, pale yellow froth. Gradually add flour – the amount is determined by egg size. The dough should hold its shape when placed but flow smoothly on the surface.

    Immediately drop teaspoonfuls of dough onto parchment‑lined baking sheet (or pipe with a pastry bag) and let dry overnight in a moderately warm room.

    The next day bake the cookies in a preheated oven at 140 °C fan for 20–30 minutes until pale yellow. The Anis cookies should develop little “feet” from below while baking.
