New Year's Pastry

Ingredients
- 250 g flour
- 1 pinch salt
- 1 tsp Baking powder
- 3 tbsp heavy cream (30% fat)
- 170 g cold butter
- 0.5 vanilla bean (pulp)
- 100 g sugar
- 0.5 tsp cinnamon
Instructions

Mix the flour with the salt and baking powder, mound on a work surface, create a well in the center and pour in the cream. Gather the cold butter into small pieces around the edge and knead with both hands into a smooth dough. Wrap in cling film and refrigerate for 45 minutes.

Preheat the oven to 180°C (350°F) fan‑forced.

Roll the dough out to a thickness of 3–4 mm on a lightly floured surface, cut out shapes such as pigs, mushrooms or clover leaves if desired. Place them spaced apart on a baking sheet lined with parchment paper and bake in the preheated oven for 6–8 minutes until pale.

Mix the vanilla pulp with the sugar and cinnamon.

Remove the cookies from the sheet while still hot and toss them in the sugar mixture, then cool on a wire rack.
