Baked Potatoes with Bacon and Cheese

Baked potatoes with bacon and cheese from Spoonsparrow are ideal for movie nights, as a party snack or in between!
Ingredients
- 250 g low‑fat quark
- 200 g Sour Cream
- 1 tsp seasoned vegetable broth
- Salt
- white pepper
- 2 tbsp chives rings
- 10 medium potatoes
- 2 tbsp olive oil
- 20 slices bacon
- 20 slices raclette cheese
- arugula (for serving)
- Salt

Instructions

Wash the potatoes and cut them in half lengthwise. Brush a baking sheet with oil and place the potatoes cut‑side down on it. Bake in a preheated oven at 200 °C for about 25 minutes.

Meanwhile, mix all quark ingredients except 1 tbsp chives together, season, divide into bowls, and garnish with chives.

After baking, remove the potatoes, raise the oven to 250 °C fan‑grill. Carefully lift the potatoes from the sheet with a spatula, flip them, lightly salt and pepper the cut side, lay bacon on top, cover with cheese, then return to the oven until golden yellow.

Plate the baked potatoes with the dip, garnish with arugula, and serve.
