Baked Filo Strawberry Pockets

Ingredients

  • 400 g Strawberries
  • 2 tbsp powdered sugar
  • 2 tbsp Orange juice
  • 250 g filo pastry
  • 30 g liquid butter
  • 2 sprigs Mint
  • 1 tsp unprocessed lemon zest
  • 1 tsp liquid honey
  • 250 g yogurt

Instructions

    Wash, trim and cut the strawberries into pieces. Mix with powdered sugar and orange juice.

    Preheat oven to 180°C fan.

    Separate the filo sheets. Cut into strips about 7x22 cm and brush with butter. Place about 1 tbsp of strawberry mixture on the lower end of each strip and fold in a zigzag to form triangles. Continue to the top edge and place pockets on parchment-lined baking tray. Brush with remaining butter and bake for about 15 minutes until golden brown.

    For the sauce, rinse mint leaves, shake dry, remove stems and finely chop. Mix lemon zest and honey into yogurt.

    Serve the warm filo pockets drizzled with sauce.
