Baked Rice Pudding

Ingredients
- 800 ml milk
- 1 Vanilla bean
- 200 g rice
- 3 eggs
- 50 g butter
- 50 g sugar
- 1 tbsp brown sugar
- butter (for greasing the pan and topping)
Instructions

Preheat the oven to 200°C fan.

Grease a pudding dish with butter.

Bring the milk and split vanilla bean to a boil, then add the rice. Simmer on low heat for about 30 minutes, stirring occasionally, until the mixture thickens; let it cool slightly.

Separate the eggs. Whisk the butter and sugar until fluffy, then add the yolks until a thick, airy mixture forms.

Fold in the cooled rice custard (remove vanilla bean).

Beat the egg whites to stiff peaks and gently fold into the mixture.

Pour the batter into the prepared dish, top with butter flakes and sprinkle brown sugar over it.

Bake for 50-60 minutes until golden brown.

Cool before serving.
