Neapolitan-Style Pizza

Ingredients
- 250 g flour
- 15 g yeast
- 1 cup lukewarm milk (1.5% fat)
- 1 egg
- 1 tsp grated nutmeg
- 2 tbsp oil
- 500 g tomatoes
- 8 anchovy fillets
- 200 g mozzarella
- 4 tbsp oil
- iodized salt
- 1 tsp black pepper
- dried oregano
- dried Thyme

Sift the flour into a bowl, create a well in the center and crumble the yeast into it. Mix the yeast with the lukewarm milk and a little flour in the well. Dust this starter with a bit of flour and let rise for 20 minutes in a warm place.

Add the remaining flour to the starter along with the egg, nutmeg, and oil, knead into a smooth, firm dough and let it rise again for another 20 minutes.

Score the tomatoes crosswise, rinse them under boiling water, and leave them in the water for 2 minutes. Remove the skins, slice the tomatoes, and discard juice and seeds.

Preheat the oven to 220°C (428°F). Roll out the dough, grease a flat round baking tin of 30 cm diameter, and lay the dough inside.

Chop the anchovy fillets. Slice the cheese. Drizzle oil over the base. Arrange tomato slices, anchovies, and cheese on the dough, sprinkle with salt, pepper, oregano, thyme, and drizzle more oil. Bake in the preheated oven for about 30 minutes.
