Ingredients

  • 300 g flour
  • Salt
  • 21 g fresh yeast (0.5 cube)
  • 1 bunch spring onions
  • 2 Garlic cloves
  • 2 tbsp chopped parsley
  • 0.5 tsp ground cumin
  • a pinch chili powder
  • 3 tbsp yogurt
  • 1 tbsp Tomato Paste
  • 400 g minced beef
  • 0.5 cucumber
  • Salt
  • 2 Garlic cloves
  • 0.5 bunch dill
  • 400 g yogurt
  • 1 tsp lemon juice
  • 1 tbsp Olive Oil

Instructions

    Mix flour with 1 tsp salt. Crumble yeast and stir into 125 ml lukewarm water, combine with the flour and knead thoroughly; cover and let rise for 45 minutes in a warm place (oven 40°).

    Peel cucumber, halve lengthwise, scrape out seeds and grate roughly, mix in ½ tsp salt and let sit for about 15 min. Drain, press in garlic. Wash dill, shake dry, trim ends, whisk with yogurt, lemon juice and olive oil. Season with pepper and salt; refrigerate.

    Wash and trim spring onions, slice into rings. Peel garlic and finely chop. Mix parsley with spring onions, garlic, cumin, chili powder, yogurt and tomato paste with the minced beef and season.

    Knead dough again, divide in half and roll each onto a floured surface into an elongated flatbread, place on oiled baking trays. Spread meat mixture over each, bake in preheated oven at 220° (bottom) for about 12–15 minutes. Serve with cucumber sauce.
