Ingredients
- 150 g butter
- 2 EL water
- 2 egg yolks
- 1 lemon (juice)
- Salt
- white pepper (freshly ground)
- 1 EL sharp mustard
- tarragon leaves
Instructions

Melt 1 EL butter in a small heavy-bottomed saucepan, add the water and whisk thoroughly. Remove from heat and gradually beat in the egg yolks.

Gradually stir the melted butter into the egg mixture over low heat, continuously whisking; do not let it boil (or use a double boiler).

Add lemon juice, season with salt and pepper, then fold in mustard and finely chopped tarragon leaves.
