Ingredients

  • 750 g potatoes
  • 1.2 l oil
  • Salt
  • oil (for frying)
  • 2 kg mussels
  • 1 onion
  • 125 g carrots
  • 1 tsp butter
  • 250 ml dry white wine
  • Salt
  • ground pepper

Instructions

    Peel the potatoes and cut them into sticks about 6 cm long for the fries. Wash and pat dry with a cloth. Heat oil to 175 °C, fry half of the potatoes for about 4 minutes. Fry the remaining half similarly.

    Wash mussels thoroughly and remove shells; discard any that remain open. Peel and finely chop the onion. Peel carrots and cut into thin sticks. In a large pot sauté onions, then carrots in butter, add 250 ml water and wine. Season with salt and pepper, bring to boil. Add mussels, cover and cook over high heat for about 8 minutes, shaking the pot occasionally.

    Heat frying oil to 190 °C and fry French fries until golden brown and crisp. Transfer to a bowl and season with salt. Serve over drained mussels.
