Fried Plaice with Beer Sauce

Ingredients
- 4 pieces of plaice fillet (about 180 g each)
- 500 ml beer
- 1 onion
- 2 cloves garlic
- 2 Tomatoes
- Salt
- Pepper (freshly ground)
- 50 g butter

Peel and finely chop the onion and garlic. Briefly blanch the tomatoes, cool, peel, quarter, seed, and dice them.

Heat 50 g butter in a wide pan and sear the fish fillets on each side for about 2 minutes, seasoning with salt and pepper. Remove and keep warm. Sauté the onions and garlic in the remaining fat until translucent, add the tomatoes and cook for about 3 minutes. Pour in the beer and simmer gently for 10 minutes, seasoning with salt and pepper.

Plate the fish with the sauce and serve alongside blanched vegetables such as carrots, sugar snap peas, and spring onions.
