Inside-Out Sushi Rolls with Avocado and Tuna

Ingredients
- 4 shiitake mushrooms
- 3 tbsp sake
- 2 tsp sugar
- 4 tbsp soy sauce
- 1 cucumber (about 10 cm)
- 0.5 Avocado
- 1 tbsp Lemon Juice
- 1 sheet roasted nori seaweed
- 200 g ready-made sushi rice
- 1 tbsp creamy horseradish
- 150 g tuna fillet
- tarragon leaves (for garnish or other herbs)
- 1 tbsp sweet and sour chili sauce
- 1 tbsp peanut oil

Pour 200 ml boiling water over the mushrooms and let them soak for 30 minutes. Drain, reserving the soaking liquid. Remove the tough stems. Rinse the mushrooms. Bring the soaking liquid with sake, sugar, 3 tbsp soy sauce, and the mushrooms to a boil and simmer for 10 minutes. Drain the mushrooms, allow to cool, then slice into strips. Wash the cucumber, pat dry, halve it, scrape out the seeds, and cut into strips. Peel the avocado, slice into strips, and immediately brush with lemon juice.

Cut a nori sheet in half. Line a bamboo mat with plastic wrap. Place one half of the nori sheet on the mat and spread half of the sushi rice over it. Flip the nori so that the rice side faces the plastic. In the center lay the mushrooms, avocado, and cucumber strips, then spread creamy horseradish on top. Using the bamboo mat, roll into a sushi roll without wrapping the plastic. Repeat with the other half of the nori sheet. Slice each roll into six pieces. Cut the tuna fillet diagonally into 12 very thin slices. Place one slice on each sushi piece and smooth it over.

Combine the chili sauce with the remaining soy sauce and peanut oil on a plate, stirring slightly with a spoon handle. Arrange the sushi on top of this sauce mixture. Serve immediately.
