Ingredients
- 100 g sea buckthorn berries
- 600 g mixed mushrooms (e.g., button, porcini, chanterelles, etc.)
- 1 onion
- 1 Garlic clove
- 2 tbsp olive oil
- 2 Bay leaves
- 1 tsp freshly chopped thyme
- 0.5 tsp freshly chopped rosemary
- 150 ml Vegetable broth
- 1 tbsp White Wine Vinegar
- Salt
- black pepper (freshly ground)
- 1 tbsp sugar

Wash the sea buckthorn berries, rinse and drain well.

Clean the mushrooms and finely chop them. Peel and finely mince the onion and garlic, then sauté with spices in a hot pan with oil until translucent. Add the mushrooms and sea buckthorn berries, cook briefly, deglaze with broth. Season with salt and pepper, simmer gently over medium heat for 15-20 minutes. Adjust flavor with vinegar, salt, pepper, and a pinch of sugar, then serve warm.
